Outlook should let me schedule irregular recurring meetings

I often need to schedule irregular recurring meetings for the same group of
people with the same meeting subjcet. I would be time saving to be able to
this within the same invitation and not having to do the whole inviting
process for every single meeting.

Have a look at WS:Repeat Appointment II at
http://www.websetters.co.uk/WSAddIns/Repeat%20Appointment/index.htm. This
will support the functionality you require.
