I know you can create appointments and make them private but I am looking for
a way to make meetings sent to me private.  Is there a way to do this without
asking the scheduler of the meeting to resend it as a private meeting?

Have you tried opening the meeting request on your calendar and then
checking the Private box at the bottom right of the screen like in an
appointment. You do not have the option when accepting the meeting but you
can go into your calendar and make it private after you have accepted it.

I hope this information is helpful.
