I want to be able to add a given number of days to today's date without
having to count them in the calendar.  Often, I have a deadline that is, say,
45 days from today.  I want to be able to determine that date without having
to count the days one by one, or having to rely on my addition, subtraction
and recollection of the number of days in a given month.

You're a bit vague about where in Outlook you want to do this.  If the
deadline is a Task Due Date try this.

If you make a Task, you can type in the Due date field +45 and it will put a
date +45 from today in the due field.  Magic eh!!
