Default "work time"

Is it possible to change the default highlighted area that represents "work
day".
Currently it's set from 8 AM to 5 PM, but my company works an irregular work
week.

Irregular work weeks are not supported by Outlook.  Once you set your work
hours and work week, it is the default for everything.
