How do I change calendars displayed on "Outlook Today"?

I have looked long and hard, but cannot find out how to do this.

That is because a native way to change the calendar on OT does not exist.
You can always try using a custom Outlook Today page - there are several web
tutorials on how to customize it, change the appearance, etc.  Try
poremsky.com, outlook-tips.com and slipstick.com for starters.
how-tooutlook.com also may have something.
