Is there a way to complete an appointment and have it save to history or
completed task folder? I have been deleting appointments once completed

Assign a category named Completed?

How do I remove the appoint from my calander? When I assign it to the
completed category and save it still shows up on my calendar. Also, once
assigned to completed is there a way to view all appointments that I have put
in this category.

You could add a filter to the view that shows only items that don't have that category. And then create a new view filtered to show only items that do have that category.
