I need to be the only person with the ability to write/change the Boss's
calendar (other than him and his personal assistant). the other two
receptionists in the office should have read only rights but not editing
rights.

Do I do this through exchange and if so, how?

The Boss does this by bringing up the Properties dialog for the Calendar folder and setting permissions there.
