You can't change the colors used for the appointment status.

You don't - this is hard coded.

You can't!
You can however change the colour of the boxes within your calendar by right
clicking a select Label and then chose a colour - ie you could colour code
all meetings of a certain type as yellow and personal stuff as green etc etc.
