The day of the week does not appear on the top grey bar which reflects the
date (nor does the year for that matter) in the 1, 5  and 7 day views. It
appears in the 31 day view only. Is there a way to display the day of the
week next to the date without having to show "new view" which clutters the
desktop?

Day of the week a long date setting - control panel, regional settings and
change your long date format.
