After completing appointment on calendar, what do I do?

I've been deleting the appointment but think there must be a different way. I
want the appointment removed from the calendar but the activity saved to the
account/contact record. And be able to review completed appointments

Appointments are not "completed" in Outlook as they are in CRM software.
You can move old Calendar Items (meetings etc) to the Archive for long term
storage (if you are on an Exchange server).
