Outlook should let me convert email messages into a meetings/appt.

Very often meetings/appointments/events are sent out as a plain email. It
would be a very cool feature to be able to click a menu option to have the
text of the email automatically paste into a new appointment.

Just FYI, you can drag an email to the Calendar folder and a new appointment
will be automatically created with the email text in the body of the
appointment.
