If I want to send myself a reminder, it's easy enough to set Outlook to
remind me. I make up an appointment and set Outlook to remind me XX minutes
prior to the action I wish to take.
But say I want remind someone else too. Once I add invitees an e-mail goes
out right away to the other(s). Is there any way to suppress that e-mail and
simply send a reminder XX minutes prior to the activity I wish to remind them
of?

No, not using meeting requests. You could send them an email.

I wanted to automate the process.
Since there's no choice, everyone's been informed so that they'll accept the
request and thus have the appropriate reminders activated.
