When I am scheduling a meeting with others from my company, an hour gets
added to their schedule (i.e. I say meeting is at 9:00 AM, their schedule
shows the meeting is at 10:00AM)

Does everyone have the same time zone & daylight savings time flags set?

In Outlook: Tools menu > Options > Calendar > Time Zone
In Windows XP: Control Panel > Date and Time applet
