How can i determine the date that an appointment was created in Outlook?

There's a creation date in the record. You can add the Created field to a
view if you'd like to see it. It's listed amongst the Date/Time fields in
the Field Chooser.

Chaange your view to a list view like Events or By Category, right-click the
header line, choose Field Chooser, and click-and-drag the Created item to
the header line.
