I have calendar setup in a public folder for a specific meeting room in my
company. I would like to setup resources so that any time I schedule a
meeting for that room and it is approved I can see the meeting in the
calendar on the public folder. Is this possible?

Resource calendars should be set up in mailboxes, not public folders. See http://www.slipstick.com/calendar/skedresource.htm

This exchange add-on will allow for showing the resource calendar (which is
an account with an inbox) as a public folder.
