The preset names of the color labels don't work for me. How can I change the
names of these labels to match my needs?

IN 2003 you can click on the Edit Labels icon when in the calendar or click
on Edit>Label>Edit labels and you can rename the labels -- but this will only
work on your calendar, not on any public calendars
