How do I change or add new labels in Outlook calendar?

When I follow the instructions for changing labels or adding labels nothing
happens.  If I click on the icon for calendar coloring, the drop down box
only shows "Automatically Format" as the only item I can click on.  

I would like to be able to either change the birthday and anniversary
labels, or create new labels.

you cant create new ones, only change existing labels to other names.

are you using exchange server and if so, are you in your calendar when you
try to change the label?
