I would like to change the default for new appointments so that there is no reminder, and if there is a reminder (if the reminder box is cheched) the default is 5 minutes and not 15 minutes. How do I do this?

In OL2003 (at least, if not earlier), in the Tools menu > Options dialog there are settings for that.
