I would like to group my appointments in my table view by the day of the week
not by the start date and time (Start). Is this possible?

As in this Monday and next Monday and 6 Mondays from now all in one group?
No, but you could work with autoformatting to highlight appointments by day
of the week or filter the view to show only appointments for a specific day
of the week: In the advanced filter dialog, use Start On Monday. Recurring
appointments tend to display regardless of the day though, so you may need
to add a Recurring Equals No criteria too.
