It seems that any user can access any other user's Outlook Calendar by
simply putting that user's email name in the "Open Other User's Folder"
dialogue box.
How can I stop this from happening?
Any help or advice would be deeply appreciated.
Thank you.

Check the permissions on each user's Calendar.

Only people who have been given permission to open another user's Calendar
can do so.
