Is there a way I can create a second Calendar for myself and then be able to
share it?

Also, when giving permission to share a calendar what is the create
subfolders option all about?

Yes.  You create it with FIle>New>Folder just like any other folder and you
share it the same way you share any other folder.  I believe you must allow
at least Folder Visible access to any parent and at least Reviewer access
for the subfolder itself.
