Can I directly add a given email address from the email I'm reading (like you
can on aol.) to my outlook address book?

Not to the address book, since in Outlook, the address book contains no
data, but is just a view of your Contacts folder(s), but you can add it to
your Contacts.  Open the message, right-click the sender name and choose
"Add to Contacts".  If it's an address other than the sender that you want
and it;s in one of the recipient fields, you can do the same.  If, however,
it's in the body of the message, then I don't think so.
