Flag the calendar items and then mark the flag Complete when you're done
with the something.
Add some text to the Notes field of the appointments.

I don't find a flag that works with calendar items (versus tasks or emails).
Can you put repeating task items in calendar? I do use the notes, I guess I
like them glaring at me.

It's not in the UI generally but you can add and display flags for
appointment items in a table view of the calendar folder. Right click on the
column header row and select Field Chooser. In the drop-down select All Mail
Fields. Grab the Flag Status field and drag it to the column header row
where you want it. Then you can right-click on that column and select a flag
to add to an appointment.
