Is it possible to accept just part of a meeting request e.g. if I receive a 3
hour meeting request from 9-12 but can only (or want only to) attend the last
hour, can I accept it such that my Calendar only shows an appointment from
11-12?

As far as I know, that's not possible. It's an all or nothing sort of
proposition. Maybe the organizer can send you a specific meeting request for
that portion

I find that if I click the "Calendar" button to the right of the "Accept",
"Decline", etc.  buttons, that I can modify the request as I see fit before
accepting it, having it load to my calendar with the changes I've made when
I do.
