I schedule recurring meetings one full year in advance - There are times when
I know the meetings are not going to happen - holidays, vacations, out of
town travel, etc.  I should be able to bypass those dates without having to
send more than one meeting/appointment.

This was available in GroupWise.  Why can't Outlook do the same thing?

Because it isn't Groupwise.
