When I delete a recurring appointment from my calendar (MS Outlook 2003), it
deletes all of the past occurances as well as the future ones. I would like
to have the option of retaining the past appointments as a record of my time
spent. Is there a way to set this option?

That's because recurring items are single items, not multiple ones.  The
multiple appearances are calculated on the fly.

Try specifying an end date on the recurrence.
