I have my mail delivered to my laptop from my server to keep it off the
server.  But this causes my local calendar to be the default calendar and as
such Pocket PC syncs with this calendar.  How can I either change my default
calendar to the one on the server or change the location of the calendar my
Pockey PC syncs with?

ActiveSync will sync with whatever calendar is in your delivery location.
Change your delivery location to be the server and that's what it will use.
You should be doing that anyway if you want to use Exchange's features like
free/busy, shared mailboxes, and public folders.  You can always use a rule
to move all your mail to the local PST while leaving all the other stuff on
the server so that ActiveSync can find it.
