For 2003 Outlook:  Is there a way to search for appointments of a specific
color?  For example, if I have several appointments throughout the year
labeled yellow, can I somehow bring up a listing of all the yellow
appointments?  I believe there is a way to do this with flagged e-mail
messages, but I couldn't find anything like this for calendar items.

Yes, you'll need to search on the Label field.
