Is it possible to add colors on the labels for an appointment?
Or at least change the names?

2002 and 2003 you can change the names of the labels.  Right click an
appointment in the Calendar and select Labels - on the bottom of the pop-up
window is Edit Labels.  You can make your own name for each colour but you
can't add colour until the next version (2007) is released.
