Altering recurring appointments

If I make a change to a recurring appointment in Outlook (for example change
the end date from "no end" to a specific date), I get a warning that all my
exceptions will be lost.  It is not acceptable to lose the exceptions, since
I use my calendar as a record of meetings that were held.  Does anyone know
how to get around this problem?

Make new appointments for the exception.

I'm not sure how that solves the problem.  

If I delete that week's instance of the event in its original timeslot, and
create a brand new, non-recurring appointement for the rescheduled time,
Outlook will still replace the original deleted appointment with the standard
recurring one when I make a change to the whole series (e.g. add an end
date).   Deleting the time the event wasn't held is as much an exception as
moving it to a different timeslot is.  Sorry, I may be being inarticulate - I
hope what I've said is clear.
