I would like to have a heading on my calendar week days that reads, "School
day #__" Is it possible to put in a formula that calculates 180 week days
from a certain day (August 28). And...if it is a  holiday I would like to
delete that day's heading and then it will automatically shift the numbers on
the following days, weeks, etc.
I may be asking for too much but I wont know if I don't ask!

I don't believe Outlook can do what you want.
