Where is the master catagory list in Outlook 2007?

Also; how do you assign catagories other than the several color defaults
catagoies. How do I get back the extensive list of catagories I had in
Outlook 200#?

Outlook 2007 stores the master category list in the user's default information store. When you first ran Outlook 2007, it should have built that list from all the categories currently in use. If it didn't right-click the root of each .pst file, bring up the Properties dialog, and click the option to Upgrade to Color Categories.
