How can I create a default view that shows a rolling work week.  That is, it
always begins on the current day and also shows the next 4 work days.  I'd
like to have it in the same format as the Day/Week/Month view.

Thanks ahead of time for your help!

You can't - the day/week/month view is a special view and cannot be
configured with any customizations.  The closest you can come in Outlook 2003
and 2007 is to use a day view and swipe the contiguous 5 days from the Date
Navigator to view a 5 day week.   Each new day the past day is dropped off
and the 5th day has changed.
