We use Outlook to notify our management team of staff planned absences, such
as vacation and personal days.  These are sent out as all day free
appointments with the individuals name in the subject.  Is there a way for
the person who sends those "appointments" out to hide her name so it doesn't
show in the calendar view of the people who receive the appointment?

None, other than removing the organizer field from the view.
