When I forward an appointment to Thunderbird (Outlook 2007, mail format set
to Plain text), the recipient gets the attachment as a winmail.dat file.
That shouldn't happen in plain text, should it?

Where is the option to do that? I looked for it and couldn't see where to do
that...

Open the appointment and use the Forward dropdown->Forward as iCalendar.
