How can I change my view to only show the working hours?  How can I change my
view to be similar to Outlook 2003 where it only listed booked appointments
Monday thru Friday?

You have looked at Tools-Options-Calendar Options, haven't you? (Just like
it was in Outlook 2003....)

There's no way to have the calendar show only working hours.  It will always
show 24 hours and color your working hours to make them stand out.
