Whenever I click on Calendar, then on the New button, the date defaults to
Monday regardless of what day of the week it is. How do I change this to
default to whatever day today is?

AFAIK you can't.  You can, however, double-click in the calendar at the
date/time you want, and that will create a new appointment at the date/time
you chose.
