how do I blind copy meeting invitees?

I need to invite a group of clients to a roundtable discussion, and was asked
to keep it blind -- how to do that?
the "vote yes no or maybe" buttons are not a good idea (want results to show
on my calendar and theirs).

You can't.  BCC is an email function not a Meeting Request function.

Voting will work as a BCC I think - you will get a tracking table, they will
need to drag the email about voting to their Calendar to turn it into a
Meeting.
