When I try to schedule a meeting for more than a month in advance I am unable
to see the other attendees free/busy time.  I checked with my other coworkers
and we all have the same issue.  Does anyone know how we can change this?  It
doesn't make sense that we can't do this.

Check how many months of free/busy info you're publishing here: Tools menu >
Options > Calendar > Free/Busy options
