How do I create lables  with colors for my appointments?

In Outlook you can add colored lables to your appointments by right clicking
onthe appointment and selecting label from the resulting menu.  Is that
possible with Outlook 2007.

no longer exists in 2007.  Now you need to set a Category and select a
colour that way.
