I make one calendar folder and make it defult?

open the calendar and switch to the by category view and drag it to the
default calendar - you can't change which is the default so you have to drag
them to the default.

the working hours should be the same as in outlook - afaik, there is no
separate setting in the assistant.  some options can be configured in file,
application settings but not working hours.
