I recently started a new job and was invited to several standing weekly
meetings. How can I accept reoccurring meeting invites that were initiated
months ago without those prior meetings adding to my calendar?

You can't.  Recurring meetings are single entries in your calendar.  Only
the original meeting actually exists.  The rest are calculated on the fly
from the recurrence pattern.

You can set Outlook to accept all incoming meeting requests in the calendar
settings, although you can't specify to only accept recurring events.
