Outlook Appointments

When I try to enter a new date for a later date (example Monday, 19th
November at 12.30 pm) it is not shown on that day, but at the exact time and
date when I entered it (today, 10.30 am). When I go to a date in the future
and click anywhere in a day, choose 'new appointment' in the window that
opens up is not that date and time, but today's date and current time.

How are you starting to enter these appointments?
Double-click in the Calendar grid at the rough time you need to make the
Appointment and it should default to that time.
