I just upgraded from Microsoft 2003 to 2007, now all of the recurring
meetings for the person I support show her previous assistant's name as the
meeting organizer, who was the delegate at the time the meetings were set up.
Is there a fix for this or do I need to create a new meeting invite on
behalf of the person I support?

The assistant is the one who created them... you'll need to create new
meetings or just live with it.

The prior assistant created the invites on behalf of the supervisor.  The
supervisor was the meeting organizer until the upgrade was made.
