users say appointment disapearing

E3k SP2, Outlook 2003, 3k users. I have a user saying an appointment
on her managers calendar disappered, how can I track deleted
appointments in Exchange/Outlook?

What do you mean by "track"?

To log, to see if this was deleted by a user or if an error on my
Exchange caused the calendar item to disappear.

Outlook certainly doesn't keep track of that information.  If you want to
know if Exchange does, ask in microsoft.public.exchange.admin
