My company has a public calender for some rooms like our conference room has
its own public calender set up. Since it is a public calender, users can see
the event, the time of day, and who is occupying the conference room, pretty
much all information about the event. Is there a way just to show if the
conference room is booked/empty. I want a calendar showing on a certain day
if this room is booked or not, not the infromation if it is booked.

If the calendar is in a Public Folder then the answer is no.
You would need to set up a mailbox as a resource, then you
could show free/busy, without showing details or view on the
calendar.
