Is there any way I can change the options for ALL recurring events. When I
add a birthday into my contacts it sets the reminder at 15 minutes starting
at 12:00 a.m. I would like to change the reminder and the time to something
else without having to do them all individually.
Also how can I set a category without doing it all individually as well?
You can change the default which will be used for all new items.

You can't change the default for birthdays without changing it for every
timed event (tools, options, calendar reminders). If you want to change the
reminder time for a group you can use the group by category view, add the
reminder time field then use it as the secondary group. Change the reminder
time on one item and drag the others to that group.

BTW - its Remind Beforehand field, not reminder time.
