We can color code the appointments in the calender view
of Outlook, but my boss uses the Outlook Today view, and
the color coding does not appear.  Is there a way to make
the appointments in Outlook Today color coded like in the
Calender view?

You need to use Outlook 2002 or 2003. The appointment form has a Label field
for you to choose colors. You can only see them in a Day/Week/Month view.

All versions support automatic formatting - if you switch to a table view
you can highlight the text in different colors.
