When I create a meeting for, let's say 2pm, then invite the attendees, they all see 5pm. I did not know until I received their responses. I've checked the time zone on all computers involved -- we're all on EST. Any thoughts, anyone?

Did you also check the time zone and daylight savings time settings in
Outlook.  Tools->Options->Calendar.  Ensure they both match your Windows
setttings.
