In MS Office Outlook 2003, Calendar, I added Holidays more than once and want
to delete them all and start over. How do I do it without wiping out my email
address book? Is there a better way to manage birthdays and meetings?

Display your calendar in a table view.  (Categories works well for this)
Highlight all of your holidays and press delete.  Then add the holidays
back.

the (insert latest virus name here) virus, all mail sent to my personal
account will be deleted without reading.
